Default converting a E250 cargo van electrics help

I am in Austalia at the moment but will be heading over to the US for a road trip which we will be living out of the van for 2 months traveling west coast, then living in Banff, Alberta.
We are planing mods we need to do on the van. Such as bed, small cooking, storage.
I was wondering if anyone knew what we would be looking at for our electrical elements. The items that could be connected at one time.
The van would have 12v 3 led lights, and a something like a 12v waeco cooler
I would need a inverter to run a laptop, ext hard drive, camera battery chargers, car radio.
We would be driving for a few hours each day to recharge the batteries.
Questions
What size and type 2nd Battery even brand?
Would i need a stronger alternator?
Would this type of dual system be alright?

What size inverter?
Should i get a serge protected power-board?
Is there anything else i would be missing?
We are trying to do this on the cheapest budget possible.
As we will be selling the car in 6mth's anyway
