Just bought my new 2007 Sport Trac last Saturday and have put over 600 miles on it.  I have the Limited Edition with the V8 and Six speed auto trans.  Totally loaded out 4x4.
I love this vehicle, it had great power, rides great, handles great and has all the luxury of a Cadillac.  Not used to the gas mileage yet, but you cannot expect great mileage in a 4x4.  Compared to other 4x4's it is getting around 17 to 18 on average.  I sure will be glad when they come out with some aftermarket performance goodies, MagnaFlow is the only one that has a Cat Back system right now.  And that is the only performance item that is out on the market that I can find.  If anyone knows of some that are out there, please drop me a line and let me know.  I would like to upgrade the exhaust to a dual outlet system, air intake/filter system, and anything else that might enhance the performance.  Not that it needs much.  The vehicle is very quick.  I read an article comparing the Chevy Avalanche with the 320hp V8 and the Sport Trac 292hp V8 was quicker in 0 to 60 and quarter mile times due to weighing 1000 lbs. less.

 Sounds like a nice truck. Does the trans. have overdrive? The horsepower is often lost in the weight of a vehicle. Though weight is what holds you on the ground well - it will also kill horsepower and gas mileage. The trick is finding that perfect medium. I think Ford has a better grip of the big picture as far as that goes.

Yes, it does have overdrive.  I have not noticed a lack or degraded performance with the overdrive or the six speed trans.  I do remember when I owned my 1999 Explorer with the 4.0 V6 with overdrive the loss of power.  But, with this V8 the power is a constant pull.  There is no comparison with the V6 power, this V8 and six speed trans combo is the best of both worlds, performance and economy.  I am very impressed.  Normally, I am not a Ford type guy.  Over the years I have always had bad luck with Fords, except my Explorer, it was great.  But, I had always liked the Sport Trac concept, and when this newly designed model came out I was ready to go with Ford again.  Again, so far I am VERY impressed with the Sport Trac in every aspect of the vehicle.

I just bought one too.  It's an awesome truck but haven't really tried the pep yet (only 200 miles).  I'm gonna wait the recommended 500 miles before I try to push it.

I posted earlier (see the forum under "Class III Hitch - Outrageous Price) about an issue I'm having with my Class II - Class III hitch. 

I'm also looking to accessorize this truck but am having a hard time with some of the options.

1.  Fog/Driving lights.  The truck didn't come with them but I have the "knockouts" for them.  Problem is that after market lights aren't the right size to fit into the existing holes.  Ford doesn't sell the lights.  Ford has some real weird thoughts on buying original equipment after market.

2.  A bed cover.  I've owned many pickups in the past and have always had caps put on the beds.  This time, I want a flat cover that can lock.  I want to secure things in the bed that will be safe.  I want it black (not painted to match the truck).  My picky issue is that I want to be able to unlock the tailgate, and take out the things inside without opening the top.  Does anyone have experience with these flat covers and are they water proof?

I had an '01 ST...traded it in last year for the '07 ST  4x4 Limited...mine is Orange Frost in color.  Love the V8...and all the extras.  I was worried when I traded in my '01...thought I'd never get rid of it...but then test drove the one I bought...took me 15 minutes...an hour later I was driving it home.
