Default Towing with an Escape?

I've got a 2008 2wd, V6 3.0L Escape. I have a transmission cooler and a class III Curt towing hitch. According to Ford specs, this vehicle should be able to tow up to 3500 lbs. However, I've read that specs and the reality of towing with an Escape don't always match up.

So--I'm lookin at getting a light weight trailer along the lines of an Aliner or Chalet RV.....something around 2,000 lbs. Do any of you out there tow something similiar with your Escape? If so, how does it actually perform in the "real world". What kinds of adventures to you go on with your trailer and Escape? I don't want to buy a trailer and then not be able to drag it around like I want to. Any input is appreciated.
