Coolant Temp: Actual -vs- Thermostat

I have a '83 5.0 HO motor in my Model T Roadster. The motor is basically stock, using the stock aluminum intake but with a Holley 600, Headers and a slight bump in compression. My question is what temperature does your water temp. gauge read? I am running the stock 195 degree thermostat and my Stewart Warner gauge reads right around 200 degrees. While I realize there will be a temperature gradient since the temp. sensor isn't located right at the thermostat I was merely wondering what other peoples actual temp. gauge readings were.

Thanks
