cuts off

I have a 2000 Excursion I came off a trip and parked the truck went back in it to drive it turns over but will not stay running as soon as I take my foot off the pedal it dies. I have replaced the fuel filter and checked all fuses. checked all plugs and hoses. when I start it up a little white cloud comes out the exhaust which seems like the choke is stuck or something can anyone help?
