Post Bogging down

Help
We have a 2006 F350 that has an occasional flat spot on acceleration. It just falls on it's face then will take off like mad and be ok for miles.
It is a 4wd, 5.4 engine with manual transmission..
The engine has maybe 550 miles on it, no check engine light on, and it is 4 hours from the shop.
I am thinking maybe mass air flow but ???

Unplug the mass air sensor and see if that makes a difference
