I just bought this van from my sister; I'm wondering how hard it would be to take out the 2nd row bench and add captains chairs there instead. I do not have small children, so I would rather have the separate seats.

Any help would be appreciated.

 

I did it and it's pretty easy. Get the individual bucket seats, and 2 more of each of the 2 types of plastic trim for the hold-downs from a junkyard. Take the old seat out, cut the carpet and padding to expose the 4 additional hold-down points already built into the floor, and install them.
