Spark plugs and cylinder heads?

Hi all.. I'd like to get all spark plugs changed on my e250, but the shop told me that they can't because they might strip the cylinder heads and if that happens they don't have time to deal with it. Is this normal?

Need to know the vehicle info . Year,model, engine etc.
