Default 2008 Escape Hybrid AC issues

Hello everyone.
I tried everything I can think of and searched the internet but can not find a solution to this AC issue I’m having.
So I bought this 2008 Ford Escape 2wd Hybrid a few years ago.
When I bought it the AC didn’t work at all. So I replaced the Compressor, vacuumed the lines, and filled with refrigerant.
That worked and blew ice cold air for like 2 years. Then one extra hot summer day after driving around, when I stopped at a store and came back out, it only blew air out the vents, not cold at all.
Eventually it went away and continued working properly.
Now it’s gotten worse.
So first time starting the car in the morning it’ll blow cold AC but after driving for 30min it’ll turn to just hot air from outside.
What’s weird is if I’m driving it at night and it’s cool out it’ll turn on and blow cold ac again.
My thoughts are something is getting too hot and switching off.

I got the system vacuumed and refilled with refrigerant thinking it was low on refrigerant but that didn’t work.
So I changed the AC Relay under the hood in the fuse box and that didn’t work either.
So I’m completely lost, unless the AC compressor is acting up but it’s only 2 years old.

Any info or ways to check is appreciated !
