At the same electrical power (and I assume you have 35W HID ballasts and lamps), the 4300K version gives you the maximum brightness and is closest to daylight, which translates into the best coverage and color reproduction. I have both 4300K (mains) and 3000K (fog) on one of my cars. 3000K is great for fog lamps but not for mains, 4300K (or 4000K if this is what you can get) is what you want for the main headlights. 6000K is less bright and a bit too greenish-bluish (I find it ugly, but that's a matter of taste :-)

One interesting detail: there are higher power HIDs available (55W or so) and the 4300K version gives an even better and more pleasant color - I have these on my other car and I love them :-)

The 8k+ K color temperature lamps work great at impressing everybody else but are illegal for road use, put out less light as you go higher with the color temperature, and distort colors - so the short answer is "don't bother".

However, HID lamps must be installed in headlights specially designed for them. If you plan to upgrade your ride by replacing halogens with HID, you should only install HIDs if the headlight lens is perfectly clear - that is, you can see through it as clearly as you can see through your windshield. If this is not the case, make everyone else a big favor and don't put HIDs at all - you'll blind everybody on the road, and that can put your life - and theirs - in danger. And yes., the cops don't seem to enjoy seeing this kind of upgrades either :-)
