Default how do you know when you resto is too far gone to be saved?

Heres the deal, I bought a 66 Fairlane 500 XL with a 289, had some damage to the passenger door, and front driver side fender, and rear bumper. What I didnt know is that behind the dash board is rusted thru. under the front windshield, you can look down all the way into the floor board, if there was one there. SO, my question is, how do you know when your resto is too far gone to be saved?
