Default 1991 Ford Crown Victoria P72 5.8L 351 carburetor Rebuild or new aftermarket help

1991 Ford Crown Victoria P72 5.8L 351 carburetor
Is is better to rebuild the OEM carb or upgrade to aftermarket? Pros and cons of both options?
If so, any recommendations for aftermarket intake manifold and carburetor for this 5.8L: 351? Will original carb sensors and electronic harnesses be compatible?

Don't know the reason you feel the carb has a problem. 2 barrel or 4 barrel carb ?
Could you enlighten us?

Very hard to start on cold starts. Tiny amount of starter fluid direct into carb helps to start. No smoke from exhaust when started. Once started it idles pretty good however it does occasionally stall while driving. Car only has 41k but has been garaged for many years. Recently replaced fuel tank as there was rust deposits in old gas so now on the carb. Not sure if rebuilding OEM carb is best solution or open to suggestions on which 2 barrel or 4 barrel intake and card setup to replace with.
