Default Fasle overheat after 2014 ford escape engine replacement

Hello,
I own a 2014 Ford Escape 1.6 L- FWD, My engine failed due to being out of time. I order a used engine, the engine was in working condition before being removed, and I had it installed by a mechanic at a shop. However, within 1 minute of the car being started, there is a notification on the screen that read: High Engine Temperature Stop Safely. Upon scanning the following code came up P1299 Cylinder Head Over-temperature Protection Active. The coolant level sensor, the coolant temp sensor, and the Cylinder Head Over-temperature Protection sensor were replaced. The shop also reset the PCM however the issue is still there. The engine does not overheat while it is running from the data received on the tech computer. So far the tech at the shop told me the issue is most likely electric and he will continue to work on it. My car does not have a remote start and is out of warranty. I would appreciate any opinions on resolving this issue.

The sensors may be OK, but we don't know about the wiring.
There is a good possibility wires got mixed up or pinched. Can you post the data stream info as shown by the scan tool?
