What does the shift indicator look like? If you have a 6 cylinder motor or a 292/312, you probably have a 2 speed Fordomatic which was Ford's version of the Powerglide. If you have a 352, you probaby have either a Borg-Warner 3 speed that starts out in 2nd unless you give it a lot of throttle or shift to Low and then goes to 1st gear. Could also have a Cruise-O-Matic and that has 2 drive ranges. The first range starts out in 2nd gear, and the 2nd range starts in first gear.

OK, what I should have said was "If it starts MOVING in first gear, it's probably a Cruise-O-Matic. Cruise-O-Matics have 2 drive positions, the one closer to neutral will take off in 2nd gear, and the one closer to low takes off in first gear.
There's probably a tag on the transmission saying what type it is. Does the truck ID tag in the left door have any indication on what option the transmission is?
