7.3L issues need assistance with diagnosis
So this issue just started last night, I went to start my truck (waiting for the glow plug light to shut off before start up) and started the engine. She idled at around 750 (or normal idling RPMs) and then she shot up to about 1100-1200 RPMs and at that point the engine began to shake vigorously as did the whole truck. (She held constant “idle” there for some time before I turned her off) Never ran into this issue before and was wondering if someone has some insight on this issue. It’s not the ICP or CSP sensor as both of those were already replace FYI (to rule out possibilities)
Also on the side note, when I press the accelerator pedal, she jumps very high to 2500-3000 RPMs as if I slammed the pedal to the floor.

I check my scan tool (expensive one) and nothing I found was popping up nor did the check engine light which I found odd. But yes scanned everything and and nothing. But will be performing an Injector Buzz Test this evening.

I ran my other code scanner while the truck was running and not running.
Codes:
P0269 - Cylinder 3 contribution/ balance fault
Engine & Powertrain
P0541 - Intake air heater circuit low
P0113 - IAT circuit high input
P1211 - Injector control pressure above/below desired
Generic Electronic Module:
B1352 - ignition key-in circuit fault
B1318 - low battery voltage at module
B1359 - ignition run/accessory circuit fault

You might consider trying this;
Write down the codes you received so far, clear them, then clean all the electrical connections you can find starting right at the battery.
You didn't say what year your vehicle is, some had problems with leaking windshields and that moisture leaked onto the Gem module /fuse panel and all sorts of crazy problems appeared. Suggest you check the fuse panel for rust/moisture in that area and clean it if found.
