Default Towing Advice

I am just beginning to research the best options for towing horses and am currently way under powered to pull two horses in a small living quarter trailer. I was looking at the older trucks w the 7.3L engine but it seems like the million mile motor is great but everything else breaks down. The thought of breaking down with two large horses on board is terrifying....does anyone have any recommendations for the best year/engine/model and type of hitch that would be reliable and safe? The more I read the more confusing it can be, and I have found that sales people just want to sell a truck regardless of the intended use.

I Have a 1999 F350 7.3 ltr 2WD 6 Speed. 334000 miles. Aside from normal maintenance stuff the only thing that crapped out on mine was the AC compressor. The previous owner took very good care of the truck and I have it in a garage.
