Something to consider,

Set it up so if anything fails the fan will run all the time. That way you can prevent an overheat condition if the swirch/sensor/or relay fails.

Thanks Hanky. It's a dual fan I already set up one side on a toggle switch. Relay and wiring in place looking for the thermo switch for the other side.

If you set up one of the fans so that when a relay is activated it opens the circuit and that fan will not run .

If power is supplied to the relay hot side and the relay control coil that relay will stay open. But if for some reason power is interrupted to the relay coil it will spring closed and run the fan as long as the key is on.That way you don't have to watch it and it should always be available to run if something in the control circuit fails , the fan will run preventing a possible overheat condition . The other fan you could hook up to run if the temp reaches a particular temp and then turns on. What you are trying to do is never having to worry about a sensor failing or possible wire problem. You are covered all the time.
