98 Escort ZX2 A/C issues
When the additional load of the A/C compressor is placed on the engine, the signal from the A/C controls tell the PCM and the PCM will increase idle speed to make up for the increased load. That is one system that would have to be checked out.
A vacuum leak that is present when the air system is turned on could be another cause.

If it's killing the engine, see if the compressor is seizing up. I can imagine a tensioner keeping the belt that tight.
