Default 2005 Escape V6/3.0L intermittent oil light cause?

My oil light randomly, occasionally comes on and I can't figure out why. Oil level is fine. I'll be driving the 20 miles home and, one out of ten times, it'll come on for a couple minutes and then turn back off. Drives fine, no other symptoms. I've tried to see if any codes were stored in there but I don't have a high-end scanner so there's nothing. Any things I should look into? Obviously don't want it to become a larger problem... even though it has done this before, then stopped for many months, then come on a couple times over the course of a month, then stopped for months, etc.

Oil level, when it's very low, usually mean you have low oil pressure then no oil leak and good level that oil pressure lamp means you might have high oil pressure.
Let's begin with the easy to difficult below:
1) Change your PCV valve, Ford says every 20k to 50k miles. When was the last time you change it? Note crankcase pressure and oil pressure are not related directly but a bad PCV valve can cause high crankcase pressure, as a result of oil leaks to cause low oil pressure. You can clean the PCV but since it's dirt cheap like $5 just buy new and replace. When you are ready to replace, you should also test your old PCV valve, just remove it, shake it, what do you hear?

2) Clean your oil pressure switch

Above diagram locate C103, remove just the electrical connector and clean both ends with contact cleaner, use wire brush if needed. If it's bad just buy new pigtail at rockauto and replace. Do not remove the switch (or massive motor oil may spill all over), this switch never breaks, if there is a problem it's usually just the electrical connector causing the bad reading.
You are still urged to scan for codes, try free scan from autozone or another place. Note you can have 10+ codes without triggering the CEL.
3) When was the last time you change your oil and filter? Perhaps you should do it sooner this time. If they offer engine flush, say no, at this moment.
4) Lastly, I have attached oil_pressure_test.pdf and oil_pump.pdf, check them both, something you don't want to see but you have to face it and if you think you can handle that yourself.

Another point of view,
The better way to approach this is,
Have the engine oil pressure verified with a regular gauge.
Once the pressure is verified as fine, replace the oil pressure sending unit. Pretty common problem. The sending units do wear out and work intermittently.
Some can be a real pain to get to and replace. Best to have a good shop do the verifying and replace the sending unit.

That's duplicating what's included in my Oil_Pressure_Test.pdf and mine has far more details and procedures covered.

If you don't know what or how to do it, I guess it is OK to refer them to a pdf..
